Ingredientsi:
- 200 g Friglo young green beans
- 400 g king prawns or shrimp
- 300 g new potatoes
- 80 g butter
- 150-200 ml dry white wine
- 1 sprig fresh rosemary
- 1 garlic clove (whole)
- 1 lemon, cherry tomatoes, arugula, red currants (for serving)
- Salt
- Freshly ground black pepper
Preparation:
Wash the new potatoes well, then cook them in salted boiling water together with the Friglo green beans for about 20 minutes, until tender. Drain, then sauté the potatoes and beans in one-third of the butter. Season with salt and pepper and set aside.
In the same pan, sauté the cleaned prawns in the remaining butter with the whole garlic clove and the rosemary sprig. When the prawns turn a pinkish-red color, pour in the white wine and let it simmer until it reduces and emulsifies with the butter into a creamy sauce.
Serve with lemon wedges, cherry tomatoes, arugula, and red currants.
