Ingredients
- 1 pack Friglo Golden Vegetable Mix (corn and peas)
- 200 g mixed seafood (shrimp, squid, or prawns)
- 1 small red onion, finely chopped
- 1 Tbsp olive oil
- Juice of 1 lemon
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Blanch the veggies: Add the frozen Friglo vegetables mix to boiling water and blanch 2-3 minutes. Shock in cold water to stop cooking, then drain very well.
- Cook seafood: In a pan, warm olive oil over medium heat. Sauté seafood briefly until just cooked; season with salt and pepper.
- Combine: In a large bowl, mix the drained vegetables, seafood, and red onion.
- Dress & serve: Add lemon juice (and a drizzle more olive oil if desired). Season to taste with salt and pepper. Toss well. Garnish with fresh parsley and serve chilled.
Serving suggestions
Pairs well with a chilled white wine or a light citrus cocktail. Serve with crusty baguette or toasted bread.
