Yellow Cherry Cake

There are cakes that are just cakes — and those that smell like childhood. This old-fashioned yellow cherry cake was never anything complicated.
Eggs, sugar, a little oil, and those tart cherries that sink into the batter as it bakes. I remember the baking pan on the table, Mom cutting the first squares while I’m already standing nearby, waiting for it to cool just a little. That first bite — soft, juicy, slightly tangy, and powdered sugar all over my fingers. It was made when guests came over, but also when they didn’t — simply because it was Sunday. Today we have all kinds of desserts. But this one… this one takes you home.

Some recipes aren’t kept in a notebook, but in the HEART.

Measure: 1 cup = 200 ml

Ingredients:

  • 5 eggs
  • 1.5 cups sugar
  • 1 cup yogurt
  • 1 cup oil
  • 2 cups flour + 1 packet baking powder
  • 400-500 g sour cherries
  • powdered sugar + vanilla sugar for dusting

Preparation:

  1. Beat the eggs and sugar for 5 minutes.
  2. Add the oil, yogurt, flour, and baking powder; mix for another 2 minutes.
  3. Pour the batter into a baking pan, arrange the cherries on top, and gently press them in.
  4. Bake until nicely golden (175°C / 350°F for about 35-40 minutes).

Serve dusted with powdered sugar and enjoy with your favorite coffee.
