Ingredients:
- 300 g flour of choice
- 150 g coconut sugar or 100 g regular sugar
- 100 ml oil of choice (coconut, grape seed, sunflower, etc.)
- 300 ml milk of choice (dairy or any plant-based milk)
- 1 packet baking powder
- Juice of one orange
- Grated zest of one lemon
- 200 g frozen Friglo strawberries
Preparation:
Mix the dry ingredients separately, then slowly add the wet ingredients. Beat with a mixer until smooth. Preheat the oven to 180 °C. Grease the pan with oil or line it with baking paper, then pour in the batter. Add the frozen Friglo strawberries on top and gently press them into the batter so they don’t dry out in the oven. Bake for about 20 minutes, until golden. Check doneness with a toothpick. After removing from the oven, let the cake cool for 10 minutes and cut into squares.
Serving:
Serve with coffee, tea, or a glass of milk. You can always substitute other Friglo fruit for the strawberries.
